The traditional cuisines of Umbria and Tuscany find their best expressions in the variety of dishes served at the restaurant of the farm.
The secret of their success, developed throughout the years, is the genuine quality of products utilised in the making.
Traditional dishes that constitutute a most savoury and tantalising experience include antipastos of various cold cuts and canapes, home-made pasta with wild game sauce and roasts cooked on a spit. All are served with simplicity in the impressive Dining Hall of the Castle.

The Farm Produce

The Wine of Titignano
Producing wine is an art, beginning in the vineyards and ending with the moment of tasting. In Titignano this is a secular tradition that started due to the soil structure that is particularly suited to growing grapes for wine.
The Oil of Titignano
The olives are picked by hand as soon as they begin to ripen and are crushed with the Travertino Grindstones in the Farm's oil press. The oil is cloudy green and has the aroma of fresh herbs. This method is the oldest in Italy and produce the highest quality extra virgin oil.
The Cheese of Titignano
Titignano offers an excellent Pecorino, fresh or mature and a creamy Ricotta. The cheese is made from the milk of the Titignano flock which is collected daily throughout the season. A traditional method of production is used.

The castle of Titignano was built by Farolf of the Montemarte on 937 B.C.The Montemarte Family of French origins came to Italy after the arrival of Ludovico II, king of France. The ancient building was contended for a long period between Orvieto ( Guelf) and Todi ( Ghibelline). Between XVI and XVII Century it became a big Palace with a small village ( the court). In 1830 Prince Don Tommaso di Filippo Corsini from Florence bought it at an auction from Pontifical State that confiscated the estate from the powerful Montemarte family. The current  heir is Marchesa Nerina Corsini Incisa della Rocchetta. She is the owner of many estates that make a big farmhouse: Titignano along with the farms of Salviano and Vaglia.
