We aim at Simplicity!
That does not mean however to overlook the beauty of a dish but to place the product we select at the center of the stage. Yes, our philosophy is the quality of the product. We prefer simple recipes coming mostly for our traditions. Therefore our research aims to the selection of high quality products that are brought to the table with a minimum elaboration.

We take inspiration from the Tuscan tradition. We use wheat germ pasta of Morelli pasta factory, our fish is caught daily and for this reason we don't always offer bream or sea bass, but rather less known fish certainly of safe origin.
Our beef is from Italy and our selected poultry does not come from intensive farming. The only olive oil we use is extra virgin. We select our cold cuts from the best Tuscan butchers (Falaschi, Giusti) and the wine list always looks for new bottles with particular attention to organic and biodynamic wines. These choices are the result of over 20 years of experience, they could be against the flow of modern thinking but that's where I come from.
