The history of Borgo Giusto is as ancient as the stones used in this area from time immemorial, to build houses, and as simple as the life of humble peasant families who lived here for centuries, passing on from generation to generation the art of labouring in olive and vine groves, to produce the typically golden olive oil and fine wines of their beloved country. 
It was hard work in those steep hills; Borgo's historty goes back to the sixteenth century; the houses were built close to one another, in the random space allowed by the available ground; and so in time a cluster of small buildings became a village, through which ran narrow paths and ramps, widening up onto a small buildings became a village, through which ran narrow paths and ramps, widening up onto a small square. 

Each guest has following available
A large swimming pool, 20 m in length, 10 m in width and 1,40 to 90 cm in height. 
A childrens swimming pool, 9,40 m by 4,50 with a height of 50 cm. Pool side drinks and snacks are on offer throughout the day for those wishing to relax in peaceful surroundings. 
A Jacuzzi, for 4 people.

Housing

All around, like a soft blanket, endless chestnut groves, deep green in the Summer, turning into yellows and burnt browns in the Autumn, when chestnuts fall in their husks.. And then, Spring is tender green again, and white like the flowers of the acacias, bearing the promise of sweet honey to come. Changes to a peaceful way of life came about at the beginning of this century; people started to emigrate, particularly towards England and Scotland, and slowly, the village lost most of its inhabitants. 

The last to leave, did so in the fifties, when industialization offered casier working conditions and better housing, in neighbouring urban centres. Few remember today the original structures and the people who lived in the village. This is why, drawing from local oral tradition, each house has been named after the last owner who lived there, to preserve the memory of a long history, and witness their life in the village: it is particularly so for Giosy and Tosca, the original owners; but also for Aldo, Pilade and many others...

In the Borgo there is a restaurant typical of the place with three cosy dining rooms carved out of what at one time were the peasants' huts, where you can savour the dishes of the ancient Lucca tradition prepared by the cook in the old-fashioned original manner. Beef tordelli al pomodoro, frantoiana soup, trenette al pesto (long noodles in a sauce of ground herbs and oil) maltagliati pasta and spelt and bean soup, just to mention only a few of the first courses, but also exquisite Tuscan meats on the grille or chestnut-meal cakes with ricotta cheese, or onion omelets, or fried rabbit, or steamed chicken with olives.
And still more: the good vegetables from the Ca' di Giusto farm, cooked in wood-burning ovens in the Borgo just like the bread or the pastries. Near the Borgo's little piazza there is a shop where one can buy every product from the farm from the excellent olive oil, through the wine, the honey or the jams and preserves; near the piazza too, set between the large pool and the playground, there is the bar with a small dining room at the guest's disposal.

The swimming pool of Ca' di Giusto, is in the village of Partigliano, among the olive groves, 11,80 in length by 5,50 in width and the depth varies from 1,60 to 1,40 m 
 
AND THEN HORSES AND TENNIS, EXCURSIONS ALONG COUNTRY PATHS ON FOOT OR RIDING A BICYCLE 

Four new trails now depart from the Borgo to wind through an unspoiled nature and let the visitor take panoramic walks to reach a number of mediaeval villages in the neighborhood, or the church in Partigliano, where Sunday mass is celebrated by Franciscan brother Cesarino, or the meadows on mount Guzzanello with its ancient Romitorio or hermitage. For these and other paths horses or mountain bikes can be rented. The Borgo is also outfitted with a solid rolled-earth tennis court or, for a moment of relaxation for the adults, there is a game room, where they can play cards or see a film.

Products

Oil:
The extra virgin olive-oil produced in our farm comes from a vast olive-grove and it has been prepared in an olive-press with stoned olive crushers and pressed, in order to exalt the organoleptic qualities of the product. The Ca' di Giusto olive-oil has a fruit taste with an acidity less than 0,05.

Wine:
The local vineyards provide a genuin red and white wine you can taste in our restaurant and also find in our shop.

Honey:
In "Borgo Giusto" you can find different kind of honey, it depends on which seasen you come to visit us: we have "Acacia honey" in May, "Millefiori honey" in June and "Chest-nut honey" in July and August.

Homemade bread:
Our chef, bakes fresh bread daily in the two ovens at Borgo Giusto. 

Products from our vegetable garden:
