The "Civettaio" is a typical farm of the Maremma region in Tuscany.
The old house dates back to '700, in the form of a square it dominates the landscape alongside the hayloft and stable annex on a hillock.
Between myself, Gregorio Dell'Adami de Tarczal and the Civettaio it was love at first sight. The coincidences - I believe strongly in coincidences, nothing happens by chance: A coat of arms of our family has an owl and the foliage of an oak on the shield... it is the Civettaio. And it becomes the emblem!
We bought the farm at the end of the 90's with the precise intention of bringing life to this little piece of Maremma, whilst preserving traditional methods of production the best we can.
The name Civettaio derives from the owl (civetta), whom as the master of the hillock you can hear crying in the night and who like many other animals and myself do love the place. "Tonight I am going home to say hello to the porcupines..."
